Coca-Cola Pulled BBQ Pork Tacos

Coca-Cola asked me to participate in their My Coke Rewards contest by testing out a few of their chef's recipes and create my own recipe with Coke ®. I spent a few days thinking about the perfect recipe I could create with Coke.

After many days of thinking I came up with a recipe for slowed cooked Coke ® pulled pork tacos. I don't each much pork but I must say this recipe is pretty awesome. The sweetness of the coke compliments the pork and BBQ sauce. I seasoned the pork the night before with sea salt, pepper, and garlic powder. The next morning I put the pork in my crock pot and poured two bottles of coke in the over meat, followed by cumin and brown sugar. I let the pork cook all-day long while I was at work and when I came home the house smelled like aromas of coca-cola.

Coca-Cola® Pulled BBQ Pork Tacos

1 lean boneless pork loin

2 bottles of Coca-Cola ®

1 tablespoon of sea salt

1 tablespoon of pepper

3 tablespoons of brown sugar

1 tablespoon of Cumin

4 tablespoons of Worcestershire Sauce

2 cloves of garlic

1 medium tomato diced

1/4 cup of cilantro

1/4 cup of diced red onions

Feta or cotija cheese

8 corn tortillas

G.Garvin's Coca-Cola® BBQ Sauce

2 tbsp. canola oil

3 tbsp. diced jalapeño

2 tbsp. diced garlic

3 cups ketchup

1/4 cup cognac (optional)

1 cup orange juice

1/2 cup molasses

1/4 cup Coca-Cola®

1/2 cup brown sugar

1 tbsp. liquid smoke

1 tsp. garlic salt

How to Prepare

Season pork loin with salt, pepper, and garlic. Marinate overnight in the refrigerator.

Next, place the pork loin in your crockpot and season it with Worcestershire sauce, brown sugar, and cumin. Now pour the two bottles of coke in the pot.

Cook on low for 6-8 hours until the pork is tender and breaks off with a fork.

Coca-Cola BBQ Sauce:

In a large saucepan heat the oil just a little then add the garlic, shallots and jalapeño. Sauté for 2 minutes, then add the remaining ingredients. Mix well and bring to a low simmer until sauce is combined. Check your flavor and adjust the sweetness if you like.

Now that you had made the pork and the sauce, let the fun begin. Place the pork on your corn tortillas and add the lettuce, tomatoes, onions, and cilantro. Top it with cheese and G.Garvin's BBQ sauce.
